Ingredients
  

  • 1 lb pork belly cut into cubes
  • 1/2 cup liver chopped (optional)
  • 2 large potatoes peeled and diced
  • 2 carrots peeled and diced
  • 1/2 cup red bell pepper chopped
  • 1/2 cup green peas
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 tomatoes chopped
  • 1/4 cup soy sauce
  • 1/4 cup tomato paste
  • 2 cups chicken broth
  • 1/4 cup cooking oil
  • 1 tbsp fish sauce optional
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions
 

  • Pork and Liver: The pork belly is cut into small cubes and marinated with soy sauce for 10 minutes. If using liver, it is chopped and set aside for later use.
  • Sauté Aromatics: In a large pot, the oil is heated over medium heat. The garlic and onion are sautéed until softened and fragrant. Chopped tomatoes are added and cooked until they soften and break down into a sauce.
  • Cook Pork: The marinated pork cubes are added to the pot and cooked until browned. Salt and pepper are sprinkled to season the meat.
  • Add Tomato Paste and Broth: Tomato paste is stirred in and cooked briefly. Chicken broth is then poured into the pot, followed by a splash of fish sauce and sugar. The mixture is brought to a boil, then the heat is reduced to a simmer.
  • Add Vegetables: The diced potatoes, carrots, and bell peppers are added and stirred into the simmering mixture. The pot is covered, and the dish is left to simmer for 45 minutes to 1 hour, until the pork is tender and the vegetables are cooked through.
  • Add Peas: The green peas are stirred in during the last 10 minutes of cooking.
  • Taste and Adjust: The dish is tasted for seasoning, and salt or pepper is added as needed.
  • Serve: Once the pork and vegetables are tender and the flavors are well blended, the Pork Menudo is served hot with steamed rice.
